Sweet Potato & Quinoa Cakes Recipe

    A few weeks back, I decided to step outside of my comfort zone and create a healthy “patty-like” burger to meal prep for the week. And I must say- before you scroll down and see how many ingredients this recipe calls for. Just know you can substitute or add whatever addatives you desire to satisfy your tasting. I can admit the process of making any quinoa cake can be very intimidating because of all the steps but I have tried my best to simplify this so you can cook and eat stress-free!

    Now thats out the way. ha! The obsession with quinoa is unreal around my family and friends. It seems like that is all they pair with their meals when the post, or invite me over for dinner. Personally the taste of bland tiny pearls is not ideally my type of side but since experimenting in the kitchen, I have found many ways to enjoy this healthy grain.

     

    Nevertheless I have not cut brown rice completely from my diet unlike many of my friends who are on Whole30 (God bless them)! My love for food trumps most dietary restrictions but I do believe that moderation can help keep you balanced and well nourished. And lets be honest I can’t imagine life without rice- I mean how can you even eat authentic Mexican food? #Tacotuesdays are definitely LIT around here!

    So how did this come aboutI had a sack of Trader Joe’s sweet potatoes from early in the week that were on the verge of spoiling, BOGO bags of quinoa, a hangry friend and Pinterest!

    I’ve really come love these little cakes as they are great for any occasion such as; meal prepping, party appetizers or your new black bean burger alternative. I could not stop snacking on them mixture while I was forming the patties. They are seriously that good! The aromas of the spices are simply delightful while cooking but even better once they were finished.

    Instructions
    1. Rinse and peel sweet potatoes. Chop potatoes up and place them in a light greased pan with red onions and garlic. Add salt and pepper then cook down until soft.
    2. In a separate pan, cook quinoa (follow direction on package) and once finish place in senate mixing bowl.
    3. Pour sweet potato mixture in the food processor and pulse for 7-10 seconds, until finely chopped. Combine into the mixing bowl with quinoa and add breadcrumbs, Parmesan cheese, cilantro, basil, and dry ingredients. Mix thoroughly!
    4. Scoop out a medium hand full to create a 1.5' round patty. Repeat this step until all of the picture is gone.
    5. Warm up the same skillet from the potatoes and place the patties in a lightly greased pan on medium heat and cook each side for 3-4 minutes then flip.
    6. Remove form heat and place on cooling rack to drain any excess oil. Serve immediately on a toasted bun or open face over a bed of greens.
