Deep-dish Cauliflower Mac & Cheese Recipe

    Say hello to guilt-free macaroni and cheese ladies and gentlemen!

    Its hard to believe that something that incorporates cheese, milk, eggs, butter and oh yeah- CAULIFLOWER can be so darn good!

    I was a little skeptical about trying this recipe out initially with all of the many versions of cauliflower “this” and cauliflower “that”. I knew that putting my own touch on it can’t hurt but only make my family, friends and YOU enjoy eating healthy without too many restrictions. Its safe to say you’ll never have to question yourself again about indulging in Mac and cheese. But like I always say, moderation is key.

    And well… I must say my hat goes off to myself because every mouth that sampled it couldn’t believe there was cauliflower in it and Low fat dairy ingredients. Not to mention each bite is creamy, cheesy and taste like your grandma’s traditional baked Mac & Cheese without the velvetta!

    Instructions
    1. Pre heat oven to 375. Boil below noodles in water and vegetable broth until al dente. Drain water from noodles and set aside.
    2. Rinse and cut half of the cauliflower & chop into medium florets then place in the food processor. Pulse for 5-7 seconds until "rice-like".
    3. In a medium sauce pan combine, butter, 1 cup cheese blend, 1 cup of milk, and desired seasonings together. And whisk until cheese is a smooth consistency.
    4. In a lightly greased baking dish combine; noodles, cauliflower mixture, egg, remaining cheese and milk then mix together. Pour cheese sauce over the noodles and fold until noodles are fully covered.
    5. Smooth the top of the Mac and cheese ensuring all corners are touching. Then sprinkle extra cheese over top. (make sure its covered but not completely) Cover dish with aluminum foil and cook for 20 minutes
    6. Remove from oven by taking off foil and stir the Mac and cheese. (Be sure to scoop from the bottom) Then sprinkle the final layer of cheese and dust with smoked paprika. Cook for another 10-minutes on 425 uncovered.
    7. The top should be a golden yellow top and crisp brown along the edges. Thats how you know its done. Remove from oven and let macaroni sit for 5-6 minutes & dig in!
